Employees were observed not washing their hands between tasks in the food prep and ware washing area. Cross contamination of products was observed in the walk-in and reach-in coolers. Chicken and shrimp were stored above vegetables. Employee drinks were stored in the food prep area. Items in the walk-in cooler were date labeled May 9 and May 10. Items may only be held for seven days. Various items in the walk-in and reach-in coolers are not date labeled. Various items on the buffet were held at around 100° Fahrenheit. All hot items must be held at 135° Fahrenheit or above. Meat items in the reach-in freezer were stored in “Thank You” bags that are not food grade. Handwashing sinks in the ware washing area and food prep area are blocked by dirty dishes. The ware washing machine is not dispensing chemical sanitizer and the sanitizer alarm is indicating a problem. Drain flies and other insects are present throughout the ware washing, storage and food prep areas. Fuel is stored above vegetables and rice in the dry storage area.
