Approximately 50 raw shell eggs were being held at room temperature. Potentially hazardous foods prepared and held refrigerated for more than 24 hours must be clearly labeled with the date the product is to be consumed or discarded. Eight containers of prepared, potentially hazardous foods stored in the three-door reach-in cooler were not date labeled. Potentially hazardous foods prepared and held refrigerated at 41° Fahrenheit or below may be held for a maximum of seven days. Cooked pasta found in the walk-in cooler was date labeled for July 5, 2024. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The meat slicer is soiled with an accumulation of dried on food particles. Dishes and utensils must be sanitized immediately after being washed and rinsed. The large dishwashing machine is not dispensing sanitizing agent. Until such time as the machine is repaired, all dishes must be washed and sanitized in the small dishwashing machine.

The nozzle of the spray hose on the three-compartment sink in the kitchen hangs below the flood rim. Handwashing sinks must be easily accessible at all times and be used for nothing but handwashing. A jar was stored in the handwashing sink in the coffee bar area. The presence of rodents and insects must be controlled. Dozens of flying insects were found near the hand sink in the coffee bar, near the mop sink and in the food preparation area. Professional pest control must be sought immediately and copies of the receipts for treatment must be provided to this department by July 28, 2024.
