The sanitizing dispenser pump was primed for many cycles and it began dispensing sanitizing agent at the proper concentration. Employees must use a test strip often to ensure the dishwashing machine is functioning properly. Handwashing sinks must be kept clean. The handwashing sink for the grill line is soiled.

Employee water bottles must have a lid and straw to prevent cross contamination. Water bottles with screw-on lids were being used in the food prep area. A tub of raw shrimp was sitting out at a temperature of 45.5° Fahrenheit. All foods must be kept at a minimum of 41° Fahrenheit. Teriyaki chicken that was prepared 24 hours prior was not properly labeled with the date. All foods prepared prior to 24 hours of fixing or consumption must be labeled with the proper date. A bucket of raw chicken ready to be cooked was sitting in a bucket of shredded lettuce.
