Food packages shall be in good condition and protect the integrity of the contents so that food is not exposed to contaminants. A 15-ounce can of corned beef hash was found on the storage shelf with a severe dent on the seam. Condensation is dripping onto the area where clean dishes are found in the dishwashing area. This will result in contamination of these clean, sanitized dishes and utensils. Food contact surfaces of equipment and utensils must be kept clean to the sight and touch. The can opener blade is soiled with an accumulation of dried on food particles. Dishes and utensils must be sanitized immediately after being washed and rinsed. The dishwashing machine was not dispensing a higher concentration of sanitizing agent, as evidenced by the lack of color change on the test strip. After repositioning the sanitizer line and many prime cycles, the dishwasher began to sanitize the dishes and utensils. Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment and single-service items. Bleach was stored above single-service items on a shelf in the storage room.

The food must be put into smaller containers. Salsa made on June 10, 2024, a container of cooked food labeled June 8, 2024, and multiple containers of cooked food over 24 hours old were found at 50° Fahrenheit. The cooler cannot maintain 41° Fahrenheit. All potentially hazardous food that exceeded temperature and date combinations must be discarded.
